Balsamic Reduction

Balsamic vinegar, depending on how much you want to make – 2 cups will make a 1/2 cup finished product.

In a small saucepan, bring vinegar to a boil and reduce to a syrup, about a quarter of original measurement. Watch it and stir, it can burn – be careful of the vinegar fumes while boiling! They are pungent. Cool about 10 minutes. Put to the side and let cool. Use sparingly.

This can be used on bruschetta, Caprese salad or even ice cream.
