Ingredients

  • 4 Tbs flour, divided
  • 1/2 tsp salt
  • 1 pound beef sirloin, cut in 1/4” wide strips
  • 2 tsp butter
  • 1 cup thinly sliced mushrooms
  • 1/2 cup onion, chopped
  • 1 clove garlic, minced
  • 2 Tbs butter
  • 1 Tbs tomato paste
  • 1 (10 1/2 oz) can consume OR- 1/4 cup beef stock
  • 1 cup sour cream
  • 1 Tbs cooking sherry

For Serving: Rice OR- egg noodles

Directions

Combine 1 Tbs flour with salt, dredge meat.

Heat 2 tsp butter in pan, sear meat, browning all sides.

Add mushrooms, onion and garlic, cook 3–4 minutes until onion is just tender. Remove meat mixture from pan, add 2 Tbs butter to pan drippings, mix in 3 Tbs flour. Add tomato paste.

Slowly pour in cold meat stock stirring constantly, until mixture thickens. Return mushrooms and meat to pan. Mix in sour cream and sherry, cook a bit longer.

Serve with rice or noodles.
