Ingredients
- 4 Tbs flour, divided
- 1/2 tsp salt
- 1 pound beef sirloin, cut in 1/4” wide strips
- 2 tsp butter
- 1 cup thinly sliced mushrooms
- 1/2 cup onion, chopped
- 1 clove garlic, minced
- 2 Tbs butter
- 1 Tbs tomato paste
- 1 (10 1/2 oz) can consume –OR- 1 1/4 cup beef stock
- 1 cup sour cream
- 1 Tbs cooking sherry
For Serving: Rice –OR- egg noodles
Directions
Combine 1 Tbs flour with salt, dredge meat.
Heat 2 tsp butter in pan, sear meat, browning all sides.
Add mushrooms, onion and garlic, cook 3–4 minutes until onion is just tender. Remove meat mixture from pan, add 2 Tbs butter to pan drippings, mix in 3 Tbs flour. Add tomato paste.
Slowly pour in cold meat stock stirring constantly, until mixture thickens. Return mushrooms and meat to pan. Mix in sour cream and sherry, cook a bit longer.
Serve with rice or noodles.
