Black Bean & Corn Dip

Ingredients

  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (8-3/4 oz) can corn, drained
  • 1 tomato, chopped and seeded
  • 1/4 cup red onion, finely chopped
  • 2 Tbs fresh cilantro, minced

Vinaigrette

  • 3 Tbs fresh lime juice
  • 1-1/2 Tbs good olive oil
  • A couple dashes hot pepper sauce, to taste
  • 1/8 tsp garlic salt

Directions

In a bowl, whisk together all vinaigrette ingredients. Stir in bean salad ingredients. Cover and let salad stand at least 20 minutes to allow flavors to blend.
