Ingredients
- 1 (15 oz) can black beans, rinsed and drained
- 1 (8-3/4 oz) can corn, drained
- 1 tomato, chopped and seeded
- 1/4 cup red onion, finely chopped
- 2 Tbs fresh cilantro, minced
Vinaigrette
- 3 Tbs fresh lime juice
- 1-1/2 Tbs good olive oil
- A couple dashes hot pepper sauce, to taste
- 1/8 tsp garlic salt
Directions
In a bowl, whisk together all vinaigrette ingredients. Stir in bean salad ingredients. Cover and let salad stand at least 20 minutes to allow flavors to blend.
