Café Rio Barbacoa Salad

Adapted from Café Rio

  • Flour tortillas
  • Mixed greens, chopped
  • Cilantro Lime Rice (page 129)
  • Sweet Pork Barbacoa (page 81)
  • 1 (15-oz) can black beans, drained
  • Seven Seas Green Goddess Dressing OR- Ranch
  • 1/4 cup cheddar cheese, shredded

Line bowls with warmed flour tortillas. Top the tortilla with cilantro rice, black beans, barbacoa, lettuce, and cheese. Garnish with a sprig of cilantro and wedge of lime. Serve dressing on the side.
