Ingredients

  • 1/2 to 3 pounds bone-in chicken breasts, thighs & legs
  • 2 medium onions, cut into 1/4” slices
  • 2 cloves garlic, pressed
  • 1 pound sliced mushrooms
  • 1 (28 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tsp dried basil
  • 1 to 2 bay leaves
  • 1/4 cup dry white wine OR- white wine vinegar

For serving: soft polenta OR- rice

Directions

Brown chicken well on all sides in olive oil, about 15 minutes, remove from pan. Without cleaning or scraping browned bits from the pan, saute onions and garlic until translucent, about 10 minutes. Add mushrooms and stir, then return meat to pan.

In a medium bowl, combine tomatoes, tomato sauce, salt, pepper, basil, and bay leaves together then pour over chicken. Cover tightly and simmer for 30 minutes.

Stir in wine and cook uncovered for 15 minutes, stirring occasionally. Remove extra fat and bay leaves when done. Serve over soft polenta or white rice.
