Chicken Fried Rice

Ingredients

  • 6 cups cooked rice, warm
  • 2 Tbs oil
  • 1 large carrot, chopped
  • 2 celery stalks, chopped
  • 1 cup frozen peas
  • 4 to 6 green onions, sliced
  • 2 eggs, scrambled
  • 1 cup cooked chopped chicken
  • 2 Tbs soy sauce
  • Pepper to taste

Directions

In a wok or skillet, stir fry carrot and celery in oil over high heat for 2–3 minutes. Stir in peas, onion, egg and chicken until heated. Reduce heat to medium and stir in rice, soy and pepper.

    Cook rice in chicken broth to add flavor, remove chicken and/or egg.
