Ingredients

  • 4 eggs
  • 1 cup sugar
  • 1/2 cup butter
  • 1/2 cup Monterrey Jack cheese, grated
  • 1/2 cup Cheddar cheese, grated
  • 1 (4 oz) can chopped mild green chiles
  • 1 (14.75 oz) can creamed corn
  • 1-1/2 cup white flour
  • 1-1/2 cup cornmeal (fresh ground is best!) 
  • 4 tsp baking powder
  • 1/4 tsp salt

Directions

Preheat oven to 350˚.

Cream together fat and sugar. Add in eggs. Add all remaining ingredients and mix gently until well blended.

Pour into a 9×13″ pan. Drop temperature to 300˚ and bake for 50-60 minutes.

This can be made gluten-free by substituting flour.
