Creamy Broccoli Soup

  • 1 pound fresh broccoli
  • 1/2 cup onion, finely chopped
  • 6 Tbs butter
  • 4 heaping Tbs flour
  • Salt and pepper
  • 1 quart Half & Half –OR- 3 cups milk with 1 cup cream
  • 2 cups chicken broth
  • 1/8 tsp ground nutmeg

In a large stockpot, cook onion and broccoli in broth until tender. Drain off water and reserve.

In the same pot, mix butter and flour to give the base for the cream sauce. Add cream. Stir in broccoli, onions, and broth. Season and sprinkle with nutmeg.

Nutmeg is Boo’s favorite spice. It’s not really but for some reason, I started teasing her about it years ago (and still do…)
