Greek Salad

  • 1 head Romaine lettuce
  • 2 Roma tomatoes, in wedges
  • 1 medium cucumber, sliced
  • 1/2 red pepper, chopped
  • 1/2 medium red onion, wedged and thinly sliced
  • 2 carrots, diced
  • 1/2 cup feta cheese -OR- mozzarella cheese (a 1/2 cup is a good place to start and add from there)
  • 1/2 cup whole Kalamata olives
  • Pepperocinis, whole OR sliced
  • Any oil & vinegar dressing, like Italian dressing
  • Croutons
  • Grilled seasoned chicken, sliced (opt)

Toss all vegetables and feta together in a large bowl. Add dressing just before serving and toss again. Top with croutons.

To make it a meal serve on a plate with sliced warm breast of chicken on top.

This is one great way to get TONS of raw vegetables.
