Ingredients

  • 4 russet potatoes, peeled or unpeeled
  • Small quantity fresh garlic or garlic salt
  • 1/4 cup milk, warmed
  • 1/4 cup butter
  • 1/4 cup sour cream
  • 2 scallions, sliced
  • Salt & black pepper

Ingredients

Cook potatoes at 350˚ for 1 hour or microwave to soften. Cut into pieces and boil until done. Blend potatoes, milk, and butter together (see below). Add remaining ingredients and mix again. Don’t over blend, they will get sticky.

To make chunked firm potatoes roughly hand mash together and leave skins on.
For smooth potatoes put in the mixer to blend and add more milk to desired consistency.


VARIATIONS:

Add 1 Tbs horseradish – this is great with beef.
Add 1/2 cup Parmesan, sharp cheddar, or cream cheese.
Add cooked carrots before blending, adds sweetness.
Add bacon. Always bacon.
