Peaches, Burrata & Basil on Toast

  • 2 ripe peaches, washed and cut into slices
  • 1 ball of burrata, sliced thinly
  • Fresh basil leaves
  • Crusty bread, thinly sliced
  • Extra virgin olive oil
  • Salt
  • Black pepper

Toast bread and set aside.  Once the bread has cooled, drizzle a bit of olive oil over the bread and top with a few basil leaves.  Add slices of the burrata over the basil and top with slices of fresh peaches. Sprinkle a bit of salt and black pepper over the peaches and drizzle a bit of olive oil over the top of everything.  Serve immediately.
