Pork Skewers

Ingredients

  • 3 pounds pork loin, cut into bite-sized pieces
  • Skewers

Marinade

  • 3/4 tsp salt
  • Fresh pepper
  • 1 Tbs ground coriander
  • 3 tsp cumin seed
  • 1/2 cup vegetable oil
  • 1/2 cup shallot OR yellow onion
  • 1 Tbs brown sugar
  • 4 Tbs soy sauce
  • 1/4 tsp ground ginger
  • 2 limes, juiced

Directions

Mix salt through lime juice to make marinade. Marinate meat all day or overnight. Place meat on skewers, grill or cook at 350˚–400˚ for 7 minutes on each side.

If using wood skewers, soak them in water for 30 minutes before grilling so they don’t burn.
