- Prime rib—order depending on the number of people (ask butcher) and have him remove the chine bone

- 1 tsp crushed rosemary

- 1/2 cup water

Directions
Let meat sit at room temperature for 1 1/2 hours before cooking. Mix garlic, salt, pepper, oil, and rosemary together and pat on to the meat. Let sit another half hour.
At 3:00 PM (these are honestly the directions), put meat in roasting pan and cook on 350˚ for 1 hour. Turn off oven and don’t open. One hour before serving, turn the oven back on to 325˚ for 45 minutes. Remove from oven and let rest for 15–20 minutes. Mix consumé with water, heat on the stove.
Thickly carve, ladle on consume and serve with horseradish.
