Ingredients

  • 1 cup white raisins
  • 1 cup of mixed candied red & green cherries and candied pineapple
  • 1/2 cup orange juice
  • 3/4 cup milk
  • 1/2 cup sugar
  • 1 tsp salt
  • 1/2 cup butter
  • 5 cups sifted flour
  • 2-1/2 Tbs yeast
  • 1/2 cup very warm water
  • 1/2 tsp sugar
  • 2 eggs, beaten
  • 1 tsp lemon rind
  • 1 cup almonds
  • 1/4 tsp nutmeg
  • Cinnamon
  • Sugar

Frosting

  • 2 cups powdered sugar
  • 2 Tbs butter, melted
  • 1 Tbs vanilla
  • Dash of salt

Directions

Mix raisins, candies, and orange juice together in bowl.

In saucepan, pour milk, sugar, salt, and butter, scald then cool to luke-warm. Proof yeast in warm water. Mix yeast mixture, milk, eggs, and lemon rind. Beat in 2 cups of flour. Add fruits, nuts, and nutmeg. Add flour just until dough pulls away from mixer bowl. Put in a large, greased bowl, let raise to double.

Punch down, divide into four loaves. Roll, brush with butter, sprinkle with cinnamon. Fold, raise to double again, brush top with butter. Bake at 350˚ for 18–20 minutes.

Frosting

Mix all together until good consistency. Frost cooled bread.

Don’t leave Brooke alone with the finished product. She has been known to lick the icing off the top and put it back in the bag. This was years ago of course. To be safe, give her a bowl of icing instead.
